Ingredients

Serves : 15
  • 3 nos raw green plantains


  • 1 tsp turmeric


  • 1/4 tsp salt( mixed in 1/2 cup water)


  • 1 cups jaggery / sarkkar


  • 1 1/2 tbsp dried ginger powder


  • 1 tsp cardamom powder


  • 1 tsp cumin powder


  • 2 cups coconut oil


  • 1 tbsp granulated sugar

Directions

  • Add water and turmeric powder in pan and keep aside.
  • Peel the raw banana and immerse the banana inside the turmeric water to avoid browning.
  • Slice midways along the length and slice into slightly thicker for sarkara upperi
  • Heat the oil in a deep frying pan on medium heat and fry the banana pieces till crispy.
  • It should fry very crispy till light golden colour
  • In a thick bottomed pan heat jaggery and water till jaggery melts. Allow the jaggery water to become thick syrupy consistency
  • Add the dry ginger powder and the fried banana pieces into the syrup and mix well.
  • Transfer to a wide plate and allow it to cool down completely and then store in an airtight container
